BAKED LEMON FILLETS
2 teaspoons butter or margarine, melted
1/2 lb fillet of sole
2 teaspoons finely grated lemon peel
1/4 teaspoon salt
1 pinch freshly ground pepper
2 lemon wedges (for serving)
Spread one half of melted butter in a medium baking dish. Place fillets in dish, one layer thick. Brush with remaining butter and sprinkle with lemon peel. Season with salt and pepper.
Bake in a 425 degree F oven 12-15 minutes until fish flakes easily with a fork; do not overcook.
Serve immediately with lemon wedges.
Makes 2-3 servings
