Recipe(tried): Baked Squash Casserole

Hi there...This is not from the Dixie Cafe..but my favorite..I hope you can give it a try!!!

Baked Squash Casserole

To cook squash:
Cut off of the tips and cut each squash into 3-4 pieces. Drop squash into a large saucepan with enough boiling water to cover squash. Return to a boil and reduce heat and cook until tender..Drain then mash. You will nedd 2 cups.

You will need:
2 cups yellow cooked squash
2 eggs, beaten
1 cup cheese, grated
2 green peppers, chopped
2 Tbsp margarine
1 cup bread crumbs or pepperidge farm dressing
dash of salt and pepper

Mix squash, eggs, cheese and peppers together..

Melt margarine and mix together with the bread crumbs. Add half of the bread crumbs to the squash mixture and then put into a greased baking pan. Then, add the remaining crumbs to the top of the mixture.

Bake for 1 hour at 350 degrees and then enjoy! :)
