Recipe(tried): Baked Stuffed Onions

BAKED STUFFED ONIONS

6 yellow onions, peeled and cut in half
1/2 cup bread crumbs
3 tablespoon olive oil
1 chopped parsley
1/2 cup chicken, beef or vegetable stock
1 extra virgin olive oil

Remove 1-2 tablespoons from the middle of each onion with a knife or grapefruit spoon. Mince removed portion of onion. Mix minced onion, bread crumbs and olive oil together.

Pack bread crumb mixture into onions, sprinkle with parsley and dribble with olive oil. Place in baking pan, pour in stock around onions and cover with foil.

Bake at 350 degrees F for 25 minutes until tender, basting with pan juices.

Microwave Directions:
Cover with plastic, microwave on high for 8-10 minutes. Turn 1/4 after 3 minutes; Turn 1/4 after 3 minutes.
