Recipe: Spinach Puff (using sour cream and Parmesan, maybe from My Great Recipes Cards)
Side Dishes - VegetablesSPINACH PUFF
1 (10 oz.) pkg. frozen, chopped spinach
1 tbsp. finely minced green onion
3 eggs, beaten
1/2 cup sour cream
1 cup grated Parmesan cheese
1 tbsp. all-purpose flour
2 tbsp. butter or margarine
1/8 tsp. ground nutmeg
1/4 tsp. salt
Dash of black pepper
Cook spinach according to package directions, adding onion to the pan as spinach cooks. Drain well.
Fold eggs and sour cream into the drained spinach. Blend in the Parmesan cheese and flour. Stir in the butter, nutmeg, salt, and pepper. Turn into a well buttered 1 quart casserole or souffle dish.
Bake at 350 degrees F for 25-30 minutes or until center is set.
Makes 4 servings
For 2 servings:
Half of the ingredients and decrease baking time to 15-20 minutes.
For 8 servings:
Double the ingredients. Use a 1 1/2 quart casserole and increase baking time to 35 to 40 minutes.
