BAKED SWEET POTATOES

Slow cooking enhances the sweet potatoes' flavor. I love to serve them with brown sugar on the side and allow each person to put on his own brown sugar. No butter is even needed. The brown sugar melts as the sweet potato is mashed with a fork. A lot of people also like to add ground cinnamon.

6 to 8 medium sweet potatoes, washed

Prick the potatoes with a fork. Wrap each potato individually in foil. Put the wrapped potatoes into a slow cooker.

Cover and cook on high for 3 to 4 1/2 hours or on low for 7 to 10 hours.
