EGGNOG MUFFINS
3 cups flour
1/2 cup plus 1 tablespoon sugar, divided use
1 tablespoon baking powder
1 1/2 teaspoons ground nutmeg, divided use
3/4 teaspoon ground cinnamon, divided use
1 cup milk
1/2 cup melted butter, margarine or oil
2 large eggs
2 teaspoons rum or rum extract
Preheat oven to 400 degrees F. Grease 12 (2 1/2-inch) muffin cups.
In a large bowl, combine flour, 1/2 cup sugar, baking power, 1 teaspoon nutmeg, and 1/2 teaspoon cinnamon.
In a medium bowl, whisk milk, oil, eggs, and rum. Pour liquid ingredients over dry, stir just until mixed. Spoon batter evenly into prepared muffin cups.
FOR TOPPING:
In a small container, combine the remaining 1 tablespoon sugar, remaining 1/2 teaspoon nutmeg, and remaining 1/4 teaspoon cinnamon. Sprinkle evenly over tops of muffins.
Bake in a 400F oven for 20 minutes or until golden.
