10-12-99 Recipes Using Bananas: Cakes

BANANA CAKE
Recipe By : MOM
2 cups butter
1 1/2 cups sugar
2 large eggs
2 cups flour
1 teaspoon baking powder
3 ripe bananas -- crushed
2 cups buttermilk
1 teaspoon soda water
Beat (DO NOT CREAM) together the eggs, butter and sugar.
Add bananas. Stir well.
Add flour, baking powder, buttermilk and soda.
Beat well. Pour into 3 round cake pans or 9 x 13 inch pan sprayed with cooking coil spray.
Bake at 350 degrees for 20 to 25 minutes or until top springs back when touched.

BANANA CAKE ICING
Recipe By : MOM
1 box powdered sugar
2 tablespoons butter
5 tablespoons strong, black coffee
1 teaspoon vanilla
In mixing bowl mix the butter, sugar and vanilla.
Add enough of the coffee to achieve right consistency.
Beat on high until fluffy. Spread on cake.
If using 9 x 13 pan pour on while cake is hot.Dawn/NY (10:29:23) : Banana Cake with Cream Cheese Frosting
2 sticks butter
1C granulated sugar
1C light brown sugar
4 eggs
3 flour, sifted
1 / 2 C milk
6 mashed bananas
2 tsp baking powder
1C chopped walnuts
2 tsp baking soda mixed in 4 TBS water.
Cream shortening with sugars, add eggs one at a time and beat until fluffy. Add all ingredients except for walnuts and soda/water and beat till smooth. Stir in the nuts. Last, add soda/water, mix in quickly and pour into greased 10" bundt cake pan.
Bake at 350 degrees for about an hour or until a toothpick inserted in the center of the ring comes out clean. Remove from pan, cool and frost with Cream Cheese Frosting:
6 oz cream cheese, softened
4 TBS butter
1 1/2 box confectioners sugar
1 T lemon juice
Lemon zest if desired
Beat together until fluffy - ice cake and decorate with walnut halves. Refrigerate until served, and refrigerate any unused portions (if there is any left!).Gina,.Fla (09:35:42) : Mama's Sour Cream Banana Cake
3/4 c. butter, room temp.
1 box 16 oz. brown sugar
4 eggs
4 c. sifted cake flour
2 t. baking soda
4 large mashed bananas
1/2 c. sour cream
2 t. vanilla
1 c. chopped pecans
Cream butter, gradually add brown sugar, eggs one at a time, Beat on med. speed till combined. Combine flour and soda. Combine bananas and sour cream. Add flour mixture to creamed mixture, alternating with banana mixture. Begin and end with flour mixture. Stir in vanilla and nuts. Pour into a greased 15x10x1-inch pan and bake 325 for 40 mts.
Frosting:
2 1/2 c. sifted powdered sugar
1/4 c. butter, room temp.
1/4 c. sour cream
1/2 t. vanilla
Combine all ingred. and beat till light and fluffy. Spread over cake and garnish with chopped nuts.

It took a lot of coaxing to get Onelia to share her delicious recipe...
3 c. flour
1 t. baking soda
1/2 t. salt
2 c. sugar
1 t. ground cinnamon
3 eggs, beaten
3/4 c. veg. oil
1 1/2 t. vanilla
1 8oz. can crushed pineapple, undrained
1 c. chopped pecans
1 3/4 c. mashed bananas
1/2 c. chopped pecans
Combine first 5 ingred. in a large bowl. Add eggs and oil stirring until dry ingred. area moistened. Do not beat. Stir in vanilla, pineapple, 1 c. chopped pecans and bananas.
Pour batter into 3 greased and floured 9-inch round baking pans. Bake at 350 for 23-28 mts. or until cake tester comes out clean. Cool in pans 10 mts. Remove from pans and let cool completely on racks.
Cream Cheese Frosting:
1/2 c. butter or margarine, softened
1 8oz. cream cheese, softened
1 box (16oz.) powdered sugar, sifted
1 t. vanilla
Cream butter and cream cheese. Gradually add powdered sugar beating until mixture is light and fluffy. Stir in vanilla. Yields enough for a one 3-layer cake. Garnish with chopped nuts.
