MAMA DONALD'S BANANA PUDDING

1 1/2 cups sugar
1/2 teaspoon salt
4 tablespoons flour
3 large eggs -- beaten
3 cups milk
1 tablespoon vanilla extract
1 box vanilla wafers
3 bananas

In pan mix together sugar, flour, vanilla and eggs.
Turn heat on medium. Add milk. Whisk constantly until thickened.
Line a casserole with cookies. Pour in 1/3 of pudding.
Slice 1 banana over pudding.
Top with a layer of cookies. Repeat for 2 more layers.
Chill.Roz/la. (05:33:21) : This recipe comes from a very old cookbook called Favorite Recipes from Historic Farmerville, La. It has recipes from lots of my family and this is one of best!

Southern Banana Pudding

1 1/4 to 1 1/2 cups sugar
3 Tbs. Flour
1/4 tsp. salt
Add a little of 2 cups milk, then add in 3 egg YOLKS, then add the rest of the milk, stirring in well.

Set over boiling water until thickened, stirring constantly. Add in 1 tsp of Vanilla. Line baking dish bottom and sides with Vanilla Wafers. Add a layer of sliced bananas, and then pour above custard. Alternate layers until all is used up, Top with meringue using egg whites and sugar to taste. Brown in the oven till golden brown, or top with more wafers. Shelby,.IA (12:00:38) : Banana Split Pudding

3 cups cold milk
1 pkg (5.1oz) instant vanilla pudding mix
1 med. firm banana, sliced
1 cup sliced fresh strawberries
1 can (8oz) crushed pineapple, drained
1 carton (8oz) frozen whipped topping, thawed
1/4 cup chocolate syrup
1/4 cup chopped pecans
Additional sliced strawberries and bananas, optional

In a bowl, whisk milk and pudding mix for 2 minutes. Add banana, strawberries and pineapple; transfer to a serving bowl. Dollop w/whipped topping. Drizzle w/chocolate syrup; sprinkle w/pecans. Top w/strawberries and bananas if desired. Yield: 6-8 servings.

Terrytx (10:00:11) : Haven't tried this yet, but looks close to something that my Mom used to make.

Banana Salad

Serving Size : 10

SAUCE
2 cups granulated white sugar
2 eggs -- beaten
6 tablespoons water
2 teaspoons vinegar
1 pound chopped roasted peanuts
12 bananas -- sliced

Mix and cook for 3 - 5 minutes over medium heat the sugar, beaten eggs, water and vinegar. Cool and refrigerate until serving time. Then slice bananas into large salad bowl, toss with sauce, add chopped peanuts and serve.

For best results: Keep bananas fresh. Chill sauce thoroughly. Mix all just before serving.

Description: Indiana favorite; very sweet with a surprise sauce.

NOTES : From Mary Burke, Lutheran Church potluck, 1978. Sliced bananas and roasted peanuts in a sweetened egg sauce with a hint of vinegar.

24 Hour Salad
Recipe By :Mabel Adams (1955)

Dressing
3 eggs -- beaten
4 tbls sugar
2 tbls vinegar
Salad
2 cups banana -- sliced
2 oranges -- cut up
2 cups marshmallows -- chopped*
2 cups pineapple -- drained
2 cups whipping cream

For dressing: Mix all ingredients. Cook until it coats the spoon. Cool.
For Salad: Mix fruit together with whipping cream. Fold in the dressing. Refrigerate until serving time.
*I substitute mini-marshmallows

NOTES : This recipe came from an old family friend.
