Mama Ross's Banana Bread
Recipe By :Terry Ward
1 cup sugar
1/2 cup shortening
2 eggs
3 tbl buttermilk
1 tsp soda
3 ripe bananas -- crushed
2 cups flour
1 tsp baking powder
1 tsp vanilla
Mix in order given. Grease and flour loaf pan. Bake 1 hr. at 350 degrees.

Banana Date Muffin
Make 12 standard muffins
Ingredients:
9 oz./280 g./ 1 3/4 cups all-purpose (plain) flour
4 oz./ 125 g./ 1/2 cup sugar (** You may use soft brown sugar, but by WEIGHT.)
1 T. +1 t. baking powder
1 t. mixed spice
2 eggs
2 oz./60g./4 T. butter, melted and cooled
2 oz./ 60g./ 1/4 cup sour (light) cream
2 T. + 2 t. milk
8 oz./ 250 g./ 1 cup mashed ripe banana (**The peel must be browned!)
5 oz./ 155g./ 3/4 cup chopped dates
(optional, for glazing) 3 oz./ 90/g./ 1/4 cup running honey
Preheat oven to 350F/180C/Gas 4.
Grease or fit paper liner into 12 standard muffin cups.
Sift flour, sugar, baking powder and mixed spice together into a large bowl. Mix in the chopped dated and make sure the dates are coated will flour mixture and (separated from each other.)
In a medium bowl, beat eggs, butter, sour cream, milk and banana together until blended.
Add wet mixture to dry ingredients and stir until just combined. Batter will be slightly lumpy.
Fill each prepared muffin cup 3/4 full.
Bake for 20-25 minutes, or until muffins are golden and a skewer instated in center of one comes out clean. (Brush the top with the running honey, if used.) Let cool in pan for 1-2 minutes, then transfer from pan to wire racks. Serve warm or at room temperature, with cream cheese or butter.
**Substitute dried cranberries or cherries for chopped dates.
**To make slightly denser sugar-free and lower-fat muffins, omit sugar and replace eggs with 3 egg whites; use low-fat or nonfat sour cream and milk.

Here, buttermilk replaces nearly all of the oil. Very ripe bananas give the
best flavor.
2 large eggs
3/4 cup sugar
1 cup smashed ripe bananas (about 3 medium)
1/3 cup buttermilk
1 tablespoon vegetable oil
1 tablespoon vanilla extract
1 3/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Preheat oven to 325 F. Lightly grease 8 1/2x4 1/2x2 1/2-inch pan; dust with flour. Using electric mixer; beat eggs and sugar in large bowl until thick and light, about 5 minutes. Mix in smashed bananas, buttermilk, oil and vanilla. Sift flour, baking powder, baking soda and salt over mixture; beat until just blended. Transfer batter to prepared pan.
Bake bread until golden brown on top and tester inserted into center comes out clean, about 1 hour. Turn bread out onto rack and cool.
Makes 1 loaf.

2 1/2 c. unprocessed bran
1 1/3 c. whole wheat flour
1 1/2 t. baking powder
1 t. baking soda
1/2 t. salt
1 1/2 c. raisins
1 c. flaked coconut
1 whole orange, scrubbed, quartered and seeds removed
2 eggs
1 c. masked ripe bananas
1/2 c. veg oil
1/2 c. honey
Stir together bran, flour, baking powder, soda, salt, raisins and coconut. In a food processor fitted with the steel blade, process the orange quarters until peel is very finely chopped. Add eggs, bananas, oil and honey and process till thoroughly mixed. Pulse in the dry ingred. Spoon into 18 greased muffin cups and bake at 375 for 20-25 mts. Serve warm or at room temp.

3/4 c. butter
1 1/2 c. sugar
1 1/2 c. mashed bananas
2 eggs
1 t. vanilla
2 c. flour
1 t. baking soda
3/4 t. salt
1/2 c. buttermilk
3/4 c. chopped nuts
Cream together the butter and sugar. Add bananas, eggs and vanilla. Sift together the dry ingred. Add alternately with the buttermilk. Blend well. Stir in nuts and pour into a greased and floured loaf pan. Bake at 325 for 1 1/4 hours.Gina,.Fla (09:44:08) : Cabana Banana Bread
1/2 c. butter, softened
2 c. firmly packed light brown sugar
4 med. size ripe bananas, mashed
4 eggs
1/2 c. veg oil
1 c. Swiss-style pineapple yogurt
1/2 c. crushed pineapple, very well drained
1 t. vanilla
1/2 t. coconut extract
3 c. flour
2 t. baking soda
1/2 t. salt
1/2 c. shredded coconut
Oven at 350
Cream butter and sugar till light and fluffy. Beat in bananas, beat in eggs one at a time. Blend in oil. Mix in all remaining ingred. except coconut. Divide batter between tow greased loaf pans. Sprinkle coconut evenly over tops of loaves. Bake 50-60 mts. Let cool 5 mts before removing from pans.
Gina,.Fla (09:39:42) : Banana Sour Cream Walnut Loaf
2/3 c. softened butter
1 1/3 c. sugar
2 3/4 c. flour
1 t. baking powder
1 t. baking soda
1/2 t. salt
2 eggs beaten
1 1/2 c. mashed bananas
1/2 c. sour cream
1 c. chopped nuts
Cream butter, gradually add sugar, beat on med. speed. Combine flour and next 3 ingred. Mix well. Combine eggs, bananas and sour cream. Add flour mixture to creamed mixture alternating with banana mixture, beginning and ending with flour. Stir in nuts. Pour batter into greased loaf pan, bake at 350 1 hour and 15 mts.
