Banana Pineapple Loaf
1 cup butter, softened
2 cup sugar
4 eggs, beaten
1 cup mashed banana
4 cups flour, sifted
2 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 (15.5 oz) can crushed pineapple, undrained
1 cup coconut, optional
1 cup pecans, chopped, optional
Cream butter and sugar until light and fluffy. Add eggs and mix well. Stir in bananas.
Sift together flour, baking powder, soda, and salt; add to butter mixture. Fold in pineapple, and optional ingredients. Pour into greased and floured loaf pans to just over half full.
Bake at 350 degrees for 1 hour and 10 minutes or until done.
Note:
I use a 20 oz can of pineapple, I like the extra moisture.
Also I like to add chopped cranberries, it adds a wonderful zing.
