Recipe: Basic Quick Bread for Bread Machines (repost)

Hi Papa -- this recipe was originally posted by bme aust 7-14-2002 as "tried"

Quick breads can be made in the bread machine - mine has a "yeast-free bread" cycle that mixes for 10 minutes and bakes for 80 minutes.

The basic recipe produces a very fine crumbed bread [popular with the kids].

If adding fruits/nut etc, wait until almost the end of the mixing period [mine doesn't beep on this cycle] so it doesn't grind instead of mixing.

BASIC QUICK BREAD

2 Eggs
1 cup Buttermilk
1/2 cup Butter; softened
2 cups All-purpose flour
3/4 cup Sugar
1/2 teaspoons Baking powder
1/2 teaspoons Baking soda
1/2 teaspoons Salt
vanilla [opt.]

Blend eggs and buttermilk. Place liquids first into the pan: then butter, flour, sugar, salt and leaveners. Use Quick Bread setting.
