BASIC SCONES
This recipe is not low fat or low carb but I think it makes really yummy scones.
1 3/4 cups all-purpose flour
1 tablespoon light brown sugar
2 1/4 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/3 cup heavy cream
Quickly cut into these ingredients until pea sized,
1/4 cup unsalted butter (do use butter)
Preheat oven to 450 degrees F. Lightly grease a baking cookie sheet.
Whisk or sift the flour, brown sugar, baking powder, and salt together in a large bowl; set aside.
In a small bowl beat the eggs. Reserve 2 tablespoons of the eggs for later use. Add heavy cream to the eggs in the bowl.
Make a well in the dry ingredients. Pour in the liquid and combine with a few swift strokes. Handle as little as possible.
Pat dough into a circle about 3/4-inch thick and place on the prepared cookie sheet. Brush with the reserved egg and sprinkle with brown sugar. Cut into wedges but do not seperate.
Bake about 15 minutes at 450 degrees F.
Varriations:
- You can turn out the dough onto a lightly floured board, pat to 3/4 inches thick and cut the scones into diamond shapes. This might be better for a teaparty because you can make them smaller.Watch the baking time.
- Add anything you want to this basic dough.
I love a combination of orange or tangerine zest and dried cranberries.
Small cinnamon chips
use maple sugar and choppped nuts.
dried apricots and fresh ground cardamom- yumm
