Recipe: Basil Bean Salad

Basil Bean Salad

Yield: 4 servings

1 (10 oz.) pkg frozen green beans
1/2 cup onions; very thinly sliced
2 tbsp red wine vinegar
1 tbsp olive oil; plus 1 tsp.
3 tbsp water
1/8 tsp garlic powder
1 tsp dried basil
1 tbsp grated Parmesan cheese
1/8 tsp pepper
salt to taste

Cook beans according to directions, cooking until just tender-crisp. Drain. Combine beans and onions in a large bowl. Combine remaining ingredients and pour over beans. Toss until well blended. Chill several hours or overnight, stirring occasionally.
