BASIL SHRIMP WITH FETA AND ORZO
1/2 cup uncooked orzo
boiling water
2 teaspoons olive oil, divided use
1 cup fresh tomato, diced
3/4 cup scallions, washed, trimmed, and sliced
3/4 cup feta cheese, crumbled
1 tablespoon fresh lemon juice
1 teaspoon grated lemon peel
1/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper
3/4 pound large shrimp, peeled and deveined
1/4 cup chopped fresh basil (dried basil won't work!)
Preheat oven to 450 degrees F. Grease a large, lidded casserole dish.
Cook the orzo in boiling water for five minutes (do not salt!).
Drain thoroughly and place in a mixing bowl. Stir in 1 teaspoon of oil and tomato, scallions, feta, lemon juice and peel, salt and pepper; combine thoroughly.
Combine the shrimp and the basil and arrange on top of the orzo. Place the lid on top of the casserole dish.
Bake for about 25 minutes, or until the shrimp are cooked through.
Drizzle with the remaining teaspoon of olive oil and serve piping hot.
