BATTER PIE
Melt in an 8x12 inch pan:
1 stick (1/2 cup) margarine
Pour in:
1 quart hot sweetened fruit (fresh peaches or apples are great)
Sift together:
1 cup flour
1 cup sugar
1 tsp. baking powder
Add:
1 cup milk
Mix to make a batter. Pour over fruit.
Bake at 400 degrees F for 30 minutes or more.
In the next recipe the batter goes in the dish, then the fruit and the batter rises to the top:
DEEP DISH BATTER FRUIT PIE
1/2 stick (1/4 cup) butter
2/3 cup self rising flour
2/3 cup sugar
1/2 cup milk
1 pint berries or fruit
Preheat oven to 400 degrees F.
Melt butter in 1 quart baking dish while oven is preheating.
Mix flour and sugar in small bowl, add milk and stir until smooth. Pour batter in baking dish over butter. Add fruit or berries. DO NOT STIR!!!!!
Bake 20 to 30 minutes. While baking the batter will rise through the fruit to form a golden brown crust.
