Hey everyone!
I have a recipe that has been in our family for years and years, its called Beef in Lettuce cups. They are really HEALTHY!
There are many variations to this recipe, but this one has been proven to work, 100%! Please give it a go! It's great for busy mums and dads, and the kids will love it! It's a great way to get your kids eating salads, which I feel is very IMPORTANT! I bet everyone here agrees!
ANYWAY! Here is our family favourite meal (we usually eat it with a bbq meal, or just by itslef is filling!) GET COOKING NOW!!!! You will be glad you did!
BEEF IN LETTUCE CUPS
(Family size)
potatoes (around 4)
oil
ground Beef
1 small bunch corriander (cilantro), chopped
1 lettuce (*one lettuce will feed around six people, but it depends on the size of it and the amount you will need to make)
2 onions, finely chopped
2 capsicum (or to taste), finely chopped
additional vegetables, finely chopped* (optional)
1 small bunch chives, finely chopped (for garnish)
Boil the potatoes, set aside. When cool, mash (don't mash with butter, if you need to add a little liquid, just add a few spoonfulls of milk!)
Heat a pot with a little oil. Add ground beef. Stir around in pot for around 3 minutes.
Add finely chopped corriander to the beef. Cook through, (around 10 minutes or so!)
While the beef is cooking, separate the lettuce leaves. (Be careful). Place perfect lettuce leaves on the plate. These will form little "bowls" for the beef ect.
FOR THE VEGGIE MIXTURE:
In another pan/wok, cook through finely chopped (VERY FINELY!) Capsicum, chives, and onion until just cooked. Cook for around 3-4 minutes. It is best to use a wok as you won't need oil. The point of this dish is to keep it as healthy as possible!
FOR THE BEEF AND POTATO MIXTURE:
Now add the potato mixture into the pot of beef. Stir through, Until the beef and potaoes come together.
TO SERVE:
Place the veggie mix in the lettuce cups, then place spoonfulls of the beef and potatoe mixture on top. Finish with some fresh chives and a few more of the veggies.
*You can also add other veggies to cook with the onion mixture. We like carrot and other root veggies
