Recipe: Mardi Gras Beans and Rice (using sloppy joe seasoning mix)

MARDI GRAS BEANS AND RICE

1/2 lb. pork sausage, hamburger or sliced hot dogs
2 cups water
1 can tomatoes
1 can kidney beans, undrained
1 cup uncooked regular rice
1 cup chopped celery
1 envelope Sloppy Joe seasoning mix

Brown meat in large skillet; drain. If hot dogs are used, heat lightly in 2 tablespoons oil or margarine and do not pour off drippings.

Add remaining ingredients; stir and mix well. Cover, simmer for 30 minutes, stirring constantly.
