Beef Noodle Soup is the best thing to do with leftover roast. I simply cut up the beef in chunks, put it in a pot with any au jus. Add any veggies like frozen green peas and carrots, corn, any leftover veggies, water to cover and taste. If you need a stronger beef taste add some beef broth. Sometimes I also add a can of cut up tomatoes, juice and all.
Oh, this soup is real yummy. Just add biscuits or a crusty loaf of bread to round off the meal.
