Misc. Gina, I would be happy to share my easy recipe for Beef Tenderloin as I have tried many of your recipes and they have become some of my favorites.
Beef Tenderloin
Beef tenderloin is usually 3-5 pounds - place on a baking pan - Bake in preheated 400 degree oven for 45-60 minutes. Take out of oven, cover with aluminum foil and cover foil with several terry tea towels (use bath towels, if you don't have the tea towels) and let sit for 30 minutes. Slice into desired thickness. This will yield a medium rare tenderloin and it is very delicious and couldn't be simpler. For variations, I have coated the tenderloin with dijon mustard or coarsely ground black pepper. I also have a spinach stuffed tenderloin recipe, let me know if you would like that recipe also.
