Beefy Curry Stuff

Here is my recipe for curry. It's a bit haphazard due to the fact that I just sorta chuck it all in!I also cheat and use a ready made curry powder...*blush*

lean braising steak cut into quite large cubes
1 large onion, chunkily cut
1 clove garlic crushed
5 fresh tomatoes quartered
2 tsp whatever curry powder you like to use (I used Korma...I have a delicate tongue!)
2 cups fresh washed spinach
3 large potatoes peeled
1 tsp vegetable oil

This is so easy. Prepare all the ingredients. Put everything except the spinach and the potatoes into an oven proof pot. Mix it all really well, add about 1/2 pint water (enough to cover the meat)and cook for about and hour. When the meat starts to get tender add in the quartered potatoes. Add more water if necessary as the potatoes soak it up. You can add cubed aubergine here too. (eggplant?)

As soon as the meat is tender and the potatoes are cooked add in the spinach, mix well, season with salt and black pepper. taste the sauce and if it isn't spicy enough add some more curry powder. Put back in the oven for about 15 minutes then serve with plain rice.

I really enjoyed this....well..there wasn't any left afterwards!!! If you;re vegetarian do the same, but omit the meat and add in extra potatoes and make the aubergine chunky chopped. Also add more onion too. If it turns very dry don't panic! Use it to stuff wheat tortillas or naan bread. Heaven.
