Recipe(tried): Best Ever Meat Loaf (using carrot and Cheddar, with ketchup and brown sugar topping)

BEST EVER MEAT LOAF

2 eggs
1/2 cup milk
2 teaspoon salt
1/4 teaspoon ground pepper
3 slices fresh bread, crumbled
1 onion, chopped
1/2 cup grated carrot
1 cup grated cheddar cheese
1 1/2 lb extra lean ground beef
FOR THE TOPPING:
1/4 cup brown sugar
1/4 cup ketchup
1 tablespoon prepared mustard

Beat eggs in large mixing bowl. Add milk, salt, pepper and bread; beat until bread disintegrates. Add onion, carrot, cheese and beef; mix well. Pack into a 9x5-inch loaf pan.

Combine brown sugar, ketchup and mustard. Spread over meat loaf.

Bake at 350 degrees F for 1 hour; let stand 10 minutes. Remove from pan. Serve hot or cold.
