Blueberry Vinegar
Source: British Columbia Blueberry Council
Yield: 5 cups (1.25 litres)
4 cups (1 litre) blueberries, fresh or frozen
4 cups (1 litre) cider vinegar
1 cup (250 mL) granulated sugar
Place the blueberries in a large bowl. Pour the cider vinegar over the berries and let sit for one hour. Transfer to a large non-reactive saucepan and bring to a boil. Reduce heat and simmer for 20 minutes.
Strain through a fine cheesecloth-lined sieve, squeezing out as much liquid as possible.
Ladle strained liquid into sterilized half pint (250 mL) jars to within 1/4 inch of top. Wipe jar rim and put lids on jars. Process in boiling water bath for 5 minutes. Count time from when water returns to a boil.
Remove jars and complete seals according to manufacturer's instructions. If jars are self-sealing, check seals.
Note: This is a slightly sweet vinegar.
