Recipe: Braised Mushrooms (with garlic and herbs)

BRAISED MUSHROOMS

1 1/2 pounds large mushrooms, with stems
1 tablespoon butter
1 teaspoon minced garlic
1/4 cup red wine
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon salt
1/2 teaspoon pepper
1/3 cup finely chopped mixed fresh herbs: parsley, chives, tarragon, and thyme (or use all parsley)

Rinse mushrooms under cool water. Cut large mushrooms in half.

Heat butter in a heavy saute pan. Add mushrooms and cook about 5 minutes. Add garlic, red wine, Worcestershire, and soy sauce.

Cover and bake for 30 minutes in 350 degree F oven.

Remove from oven and add salt, pepper and herbs. Serve hot or cold as an appetizer or as a side dish.

Makes 8 servings
