Braised Sirloin Tips (crock pot)
Recipe By : CrockPot Cooking (Neill/Rival)
1/2 cup flour
1 teaspoon salt
1/4 teaspoon black pepper -- ground
4 pounds sirloin tip roast, trimmed -- cubed
1/2 cup shallots -- chopped
1/2 pound mushrooms -- sliced
1 can beef broth -- condensed
1 teaspoon Worcestershire sauce
2 teaspoons ketchup
1/4 cup dry red wine
3 tablespoons flour
Combine the 1/2 cup flour with the salt and pepper. Toss the cubed sirloin tips in the mixture to coat well (dredge 'em!). Place in crockpot. Add shallots and mushrooms. (If you don't have fresh, use 2 ea. 4 oz. cans of sliced button mushrooms.) Combine beef broth, Worcestershire sauce and ketchup (or tomato paste). Pour over beef and vegetables. Stir well. Cover and cook on Low setting for 7-12 hours.
One hour before serving, turn to High setting. Make a smooth paste of the wine and 3 tablespoons of flour and stir this into the crock-pot, stirring well. Cover and cook until thickened. Serve over hot buttered noodles.
