Recipe(tried): Bread Dumplings (2)

Here are a couple. My grandparents were german and slovian and these are the only dumplings I was raised on. Hope you enjoy

1 chopped onion
melted butter
cubed bread; at least one day old
3 eggs
1/2 cup milk
flour
buttered brown bread crumbs (optional )

BREAD DUMPLINGS: Simmer a chopped onion in melted butter, then add cubed bread and brown in butter. (You might have to add a little more melted butter).

Add three eggs, 1/2 cup milk, mix, shape to size of golf balls with floured hands. Drop in boiling salted water and cook covered for ten minutes. Drain water and place dumplings on a platter and pour -over melted butter or buttered browned bread crumbs

The crumbs help absorb the rest of the moisture and helps. If you don't want that then put in micro at 80% for a few minutes and this helps a lot too.

I don't make them golf ball size. I use a spoon and dip a smaller amount out.

Now my other grandmother made them this way...

Bread Dumplings
14 slices day-old bread, cubed
2 eggs
1 tsp. salt
1/2 to 3/4 c. milk
2 to 3TBS. flour
1/2 tsp. baking powder

Mix all ingredients well, adding enough flour to be able to form into balls. Drop into salted boiling water and cook about 10 minutes, or until they float.

Drain and toss with browned bread crumbs.
