Recipe(tried): Bread Dumplings

BREAD DUMPLINGS

3 cups 1/2 inch cubes white bread
1/4 cup all purpose flour
1 tablespoon each finely chopped onion and parsley
3/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon pepper
1 egg, lightly beaten
1/2 cup milk
1 tablespoon melted butter
5 cups prepared soup or broth

Combine bread cubes, flour, onion, parsley, salt, baking powder, and pepper in a bowl. Combine egg, milk and butter and add all at once to the bread mixture. Stir well and let stand for 10 minutes. Using the fingertips, shape the mixture firmly into 16 balls about the size of large walnuts. Bring the soup to simmering and lower the balls in gently. Cook gently, uncovered, for 7 to 8 minutes. Makes 6 to 8 servings.
