Mocha Nut Bread

1 1/4 cups milk
1/3 cup unsweetened cocoa
1 tablespoon instant coffee
4 tablespoons unsalted butter
1/4 cup honey + 2 tbl.
2 teaspoons active dry yeast
3 cups bread flour
1 1/2 teaspoons salt
1 whole egg
1 egg yolk
1/3 cup chopped walnuts or hazelnuts
Scald the milk; remove from the heat. Add the cocoa and instant coffee and stir until dissolved. Stir in the butter and honey. The mixture should be close to room temperature; if not, let it cool until it is. Add cocoa mixture and all remaining ingredients except the nuts in the order suggested by your ABM manual and process on the basic bread cycle according to the manufacturer's direction. At the beeper (or a few minutes before the end of the first kneading cycle), add the nuts.

1 tablespoon honey
1 tablespoon butter
3/4 teaspoon salt
1 1/3 cups bread flour
1/2 cup whole wheat flour
1/4 cup rolled oats, toasted
2 tablespoons nonfat dry milk powder
2 tablespoons cornmeal
2 tablespoons toasted wheat germ
1 1/2 tablespoons bread machine yeast
Add ingredients to bread machine pan in the order suggested by the manufacturer. (Grains vary in water absorption. If dough is too dry or stiff or too soft or slack, adjust dough consistency.*) Recommended cycle: Whole wheat/whole grain or basic/white bread cycle; medium/normal color setting. (If basic/white bread cycle is used, add 1 tablespoon gluten to either size recipe.) Timed-bake feature can be used. * Bread machine dough is slightly stickier than hand-kneaded dough.
After mixing for a few minutes, the ingredients should turn into a dough that forms a soft, smooth ball around the blade. If your machine seems to be straining or if the dough appears too dry or stiff, add more liquid in 1-teaspoon increments to achieve the proper consistency. If the dough seems too soft or slack, add additional bread flour in 1-teaspoon increments until the proper consistency is reached. Do not add more than 3 to 4 tablespoons of liquid or flour. Note: To toast the oats, spread in a thin layer in a shallow baking pan. Bake at 350 F for 10 to 15 minutes or until light golden brown, stirring often.

1/3 cup water
1/4 cup reserved pineapple juice
1 tablespoon butter softened

1/2 cup shredded coconut, toasted
1/3 cup pecan halves
1 tablespoon dry milk
1 tablespoon packed brown sugar
1 teaspoon salt
1 1/2 teaspoons yeast
Measure carefully, placing all ingredients in bread machine pan in the order recommended by the manufacturer. Select Sweet or Basic/White cycle. Use medium or light crust color. Do not use delay cycle. Remove baked bread from pan and
cool on a wire rack.

Banana Walnut Bread (ABM)

1 egg
1 tablespoon butter

To toast nuts: Spread the nuts in a single layer in a shallow baking pan. Bake at a 350 F oven for 5 to 10 minutes or till light golden brown, watching carefully and stirring once or twice. Add the ingredients to a bread machine according to manufacturer's directions, adding the banana with the milk. Bake the bread using regular or white setting (use the light color setting, if available).
