Recipe: Breakfast Crepes

Breakfast Crepes

Combine:
2 cups flour
1/2 tsp. baking powder
1/4 tsp. salt

Add:
1 cup milk
1 egg

Stir until almost combined.
Once the mixture is almost smooth, add:
1 cup milk
1 egg

Stir until very smooth and soupy; consistency should be much runnier than pancake or cake batter.

Stir in:
2 tbsp. melted butter

Heat a small skillet until very hot. Spray the skillet with non-stick spray or coat with melted butter. Pour a small amount of batter into the pan and roll to cover the bottom. Pour off any extra. (Experiment with a ladle and you will soon find the perfect amount.) Turn crepe over when lightly browned.

Dust with table sugar and roll up with a fork. Serve hot.
