Recipe: Strawberry Stuffed French Toast

Strawberry Stuffed French Toast

In a medium bowl, stir together:

2 c. sliced fresh or frozen
strawberries
2 T. sugar
8 oz. lowfat strawberry cream cheese
3/4 t. vanilla

Cut deep pockets in top crust of: 8 1-inch slices of french bread

Stuff pockets with strawberry filling and set aside.

Beat together:

4 eggs
1/4 c. skim milk
3/4 t. vanilla

Place stuffed bread into egg mixture to coat both sides.

Spray a 10-inch skillet with: vegetable coooking spray

Cook bread in prepared pan over medium heat, until both sides are lightly browned.

Garnish with any remaining cream cheese and strawberries.
