Recipe: Breakfast Omelet Burritos (Mazola)

BREAKFAST OMELET BURRITOS

8 flour tortillas
Mazola Cooking Spray
1/4 cup Mazola Corn Oil
1 cup chopped green bell pepper
1 cup chopped red bell pepper
1 cup chopped purple onion
1 tablespoon garlic
8 eggs beaten
1/2 cup parmesan cheese
Salt and pepper to taste

Spray tortillas with cooking spray. Cook in a skillet for 30 seconds per side. Set aside while you make omelet.

In a skillet, cook bell peppers, onion and garlic in corn oil.

Add beaten eggs over vegetable mixture. Cook for about 4 minutes, until eggs are softly set.

Cut omelet into four pieces, sprinkle with parmesan cheese and place into prepared tortillas.

Roll and serve. Can be served with Mexican salsa and guacamole.
