Below is some info on tofu based shakes...

Chris, in line with the smoothies, I would suggest tossing some tofu in. It has a bland flavor and mixed with bananas or applesauce, some cinnamon, a bit of lemon juice, a splash of vanilla and a little salt, it can be delicious. The salt helps to remove some of the tofu flaovr and make it more neutral while adding sweetness to the other flavors.
As you can tell by reading Sarah's post, it is difficult to find high protein sources that are not also high in fat. Unless, of course you go to man-made low-fat or non-fat products, ie. yogurt, cottage cheese, sour cream, etc. It has been a long time since I studied lifecycle nutrition but I would bet that adolescents, being in a crucial growth period, need the fat as well as the protein. I would look into that if I were you.

And I have been a long time advocate of "Diet for a Small Planet," by Frances Moore Lappe, which Sarah recommended. It was just revised and updated and should be easy to find.

That's my limited wisdom on this topic. I hope it might be helpful to you.

For a tofu smoothie in which you are looking for protein, you can use the following ingredients for any flavor...

1 pound of soft tofu
2 or 3 cups or more of milk or soy milk
(depending upon how thick you want it to be)
1 teaspoon of vanilla
1 teaspoon of lemon zest or about 2 teaspoons of lemon juice (fresh is best)
1 teaspoon of salt (which helps to neutralize the tofu flavor and also brings out the sweetness in the other ingredients)

For Vanilla Flavor:

use 1 1/2 teaspoons vanilla
and 1 1/2 teaspoons of lemon zest or 1 tablespoon of fresh lemon juice
Or you could use some vanilla yogurt until it is at the consistency that you want
Maple Syrup or Honey to taste - at least 2 tablespoons

For Chocolate Flavor:

Add cocoa powder and maple syrup...this you will have to experiment with...just add them both in small quantities, measuiring as you go along so that you know for the next time, until you get the flavor that you want

For Pineapple Flavor:

I would try adding a can of crushed of chunked pineapple, and again add sweetner to taste...you will probably need less sweetner for pineapple since it is pretty sweet already...
