Recipe: Broccoli, Cheese, Rice and Stuffing Casseroles (4)

BROCCOLI, CHEESE & RICE CASSEROLE

2 cups cooked rice
1 can cream of chicken soup
1 pkg. frozen chopped broccoli, thawed and drained
1 pkg. Pepperidge farm stuffing mix
1 (8 oz.) jar Cheese Whiz

Mix together everything except stuffing mix. Pour into greased casserole dish. Sprinkle stuffing mix over mixture. Bake for 30 minutes at 350 degrees or until piping hot.

BROCCOLI, RICE & CHEESE CASSEROLE

1 pkg. chopped broccoli
3 cups cooked rice
1 small chopped onion
1 small jar Cheez Whiz
1 can cream of mushroom soup
1 small bag Pepperidge Farm corn bread stuffing (mix with melted butter to moisten)

Cook broccoli (directions on box); drain. Saute onions. Add to broccoli, mix cheese, mushroom soup, rice (already cooked) and broccoli all together. Salt and pepper to taste. Put in greased casserole. Top with corn bread stuffing. Bake at 350 degrees for 35 minutes. No lid.

BROCCOLI, CHEESE AND RICE CASSEROLE

2 (10 oz.) boxes broccoli, chopped
1/2 cup chopped onion
1/2 cup finely chopped celery
2 sticks butter
1 cup Minute Rice
1 (8 oz.) jar Cheese Whiz
1 cup Pepperidge Farm stuffing mix
1 can sliced water chestnuts, drained
1 can cream of mushroom soup

Cook broccoli according to directions. Melt 1 stick of butter and cook onion and celery in it until tender. Prepare 1 uncooked cup of rice according to package instructions.

Combine broccoli, onion and celery, rice, water chestnuts, cheese whiz and cream of mushroom soup in an 8 x 12 inch casserole. Melt second stick of butter and mix with stuffing mix and spread over top of casserole. Bake at 350 degrees until bubbly, about 20 minutes. Makes a large amount but can be cut in half.

BROCCOLI CASSEROLE

1 (10 oz.) pkg. frozen chopped broccoli
1 can cream of mushroom soup
2 cups cooked rice
2 cups shredded cheddar cheese
1/2 cup dry Stove Top stuffing

Prepare broccoli according to directions; drain. Add remaining ingredients, reserving 1/2 cup of cheese and the stuffing mix. Mix well and turn into a casserole dish. Top with remaining cheese and then stuffing. Bake at 350 degrees for 20-30 minutes or until slightly browned.
