Recipe: Spinach Deviled Eggs (using bacon and apple cider vinegar)

SPINACH DEVILED EGGS

12 hard boiled eggs
FOR THE FILLING:
1/2 cup frozen spinach, thawed and squeezed dry
1/4 cup mayonnaise
2 tablespoon apple cider vinegar
2 tablespoon softened butter
3 cooked bacon strips, crumbled
3 green onion stalks, minced
Salt and pepper to taste
Paprika (for garnish)

Cut peeled eggs in half lengthwise and place yolks in a mixing bowl, set the whites aside.

Mash the yolks with the back of a fork and add the remaining ingredients for the filling, except the paprika; mix well.

Spoon or pipe the filling back into egg white and sprinkle tops with paprika. Cover and refrigerate at least one hour before serving.
