Recipe: Broiled Apricot Chicken Breasts

Broiled Apricot Chicken Breasts

One that I found that I really like, depends on how much you want to make for a potluck. This recipe came from the Urban Peasant, a great cooking show out of Vancouver BC.

1 tbsp. apricot jam-can also use marmalade
1 tbsp. Dijon mustard
1 tbsp. honey
1 tsp. butter-can go up to 1 tbsp.
1 tbsp. soy sauce
2 chicken breasts

Combine ingredients, stirring together. Put chicken into the mixture, coat well. Put on a baking dish. Broil 4 to 5 minutes on each side. Serve.

I usually put a bit more of the mixture over the chicken during the broiling.
