WHOLE WHEAT, CHIP, AND COFFEE BARS
2 cups all-purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 cup brown sugar, packed
1 cup cooking oil
2 teaspoons vanilla
2 1/2 teaspoons instant coffee crystals, divided use
1 cup cold water
1 package semisweet chocolate chips (1 cup)
1 cup walnuts, chopped
FOR THE GLAZE:
4 teaspoons water
1 cup powdered sugar, sifted
1 tablespoon butter or margarine, softened
Preheat oven to 350 degrees F. Grease a 15x10x1-inch baking pan.
In a mixing bowl stir together flours, soda, and salt; set aside.
In a large mixer bowl beat eggs till light and fluffy. Gradually add brown sugar, oil, and vanilla. Beat well; set aside.
Dissolve 2 teaspoons coffee crystals in cold water. Gradually stir into egg mixture. Add dry ingredients, beating till combine. Pour batter into prepared baking pan. Sprinkle chocolate pieces and nuts evenly atop.
Bake in a 350 degrees F oven for 25 to 30 minutes or till done. Cool slightly.
Drizzle with Coffee Glaze. Cut into squares.
TO MAKE THE GLAZE:
Dissolve 1/2 teaspoon instant coffee crystals in 4 teaspoon water. Combine 1 cup sifted powder sugar, 1 tablespoon softened butter or margarine, and the coffee mixture till smooth. (If necessary, add more water for drizzling consistency.)
