Recipe(tried): Bruschetta, Italian Garlic Bread

Bruschetta

Italian bread sliced 1/2-inch thick
peeled garlic cloves
virgin olive oil (I like green Sicilian)
fresh ripe tomatoes,seeded and chopped small
fresh basil, coarsely chopped
coarse salt or sea salt
freshly ground black pepper

Either toast the bread over an open fire until the outside is golden, but the inside is still soft; or place bread on a baking sheet and toast in a preheated 450F oven, about 4 minutes on each side. Rub with the raw garlic and drizzle on the olive oil. Add the tomatoes, basil, salt and pepper. (Of course, you don't have to use the tomatoes. You can also grate some parmesan on the bread while its still hot.
