MUFFINS THAT TASTE LIKE DONUTS
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/3 cup oil
3/4 cup white sugar (first amount)
1 egg
3/4 cup milk
FOR TOPPING:
1/2 cup melted butter
3/4 cup white sugar (second amount)
1 teaspoon cinnamon
In a bowl combine flour, baking powder, salt, nutmeg and cinnamon.
In another bowl, thoroughly combine oil, sugar, egg and milk. Add liquid ingredients to dry and stir only to combine. Grease muffin pans cups and fill 2/3 with batter.
Bake 350 degrees F for 20-25 minutes. Shake muffins out immediately and while hot, dip in melted butter, then combined 3/4 cup sugar and 1 teaspoon cinnamon.
VARIATION:
Fill tins 1/2 full of batter, put 1 teaspoon jam on top, and top with the rest of the batter.
Makes about 12 muffins
