CALIFORNIA STEAK
"A favorite combination-steak and onions served with noodles and a rich sour-cream gravy."
1/4 cup plus 2 tablespoons flour, divided use
1 teaspoon salt
1/4 teaspoon ground black pepper
2 pounds round steak, about 3/4-inch thick
2 tablespoons fat
1 medium onion, thinly sliced
1 can condensed beef broth
1/2 cup water
1/2 cup sour cream
Poppy Seed Noodles (recipe follows)
Combine 1/4 cup flour, the salt, and pepper.
Cut meat in 6 serving pieces and dredge in flour mixture; brown in hot fat.
Add onion slices, beef broth and 1/2 cup water. Cover and simmer 1 hour or till tender. Remove steak and onions to serving platter.
Blend sour cream and the remaining 2 tablespoons flour. Remove broth from heat and add sour cream mixture; stir to blend. Cook, stirring constantly. Just until gravy thickens.
Serve with Poppy Seed Noodles.
POPPY SEED NOODLES
4 ounces (2 cups) medium noodles, uncooked
2 tablespoons butter or margarine
2 tablespoons poppy seed
Cook noodles in boiling salted water till tender; drain. Add butter and poppy seed; toss.
