Recipe(tried): Calypso Pork Chops

Calypso Pork Chops

6 boneless pork loin chops (about 4 ounces each)
1 cup chicken broth
1/2 cup orange juice
2 tablespoons dark rum (optional)
2 tablespoons lime juice
2 tablespoons brown sugar
1 clove minced garlic
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
Servings: 6
Preparation time: 10 minutes
Marinade time: 4 to 24 hours
Cooking time: 12 min.

Combine all ingredients in a zip-seal bag; seal bag and refrigerate for 4 to 24 hours. Remove chops from marinade; discarding leftover marinade. Grill chops quickly over indirect heat in covered grill about 10 to 12 minutes, turning once to brown both sides.

Mexican Rub
Recipe By: Southern Living-Summertime

Stir together 4 tsp each of ground cumin, and chili powder; 2 tsp each of salt, ground coriander, and ground black pepper; and 1 tsp each of ground cinnamon, light brown sugar, and dried crushed red pepper. Rub into meat well.

Pork Marinade
Pork Marinade: Mix 1/2 cup soy sauce with 1/4 cup olive oil and add 2 Tbs. light corn syrup, 2 tsp. ginger powder, 1 tsp. prepared mustard, 1 tsp. thyme, and garlic and onion powder to taste in a small bowl.
