Recipe: Campfire Muffins (using muffin mix)

CAMPFIRE MUFFINS

6 Oranges
2 packages (7 or 8 oz. each) muffin mix, any flavor*
Ingredients to prepare muffin mix

Cut oranges in half. Scoop out the orange segments. Careful, don't cut or break the the orange peel halves. (The flesh of the orange can be saved for fruit salad or snacks.) Reserve the hollow peel shells as baking dishes.

Prepare the muffin mix according to the package directions.

Fill the orange peel cups half full of batter. Wrap each one loosely with heavy duty aluminum foil.

Place in hot coals, making sure that the batter side stays up. Or place around edges of a barbecue, away from direct heat. Cook 8 to 10 minutes until muffins are done.

*Also, you could use prepared cake mix or brownie mix instead of muffin mix.

VARIATION:
You can also add a few cranberries or raisins to the batter.

Makes 12 (use 3 oranges per package of muffin mix).
