I can my green beans every year. All you need is a canner, jar lifter, jars, lids, rings and the following information:
Remove ends and snap your beans into length desired.
Wash thoroughly.
Fill clean quart jars with beans to the "neck" of jar.
Pack as many beans as tightly as you can in each jar.
In each jar add 1 tsp lemon juice and salt.
Fill jars to the neck with tap water.
Wipe the jar lip very dry. Add lid and ring; hand tighten (don't overdo it)
Place in canner (I have a 7 qt. with the basket in it)
Fill canner with water to the neck of the jars.
Cover and Turn on high heat. When the water starts to boil,time for 1 1/2 hours*.
When done, remove from canner and set on counter top to cool.
*If you do not use lemon juice, you have to boil for 3 hours.
I have been using this recipe for years as did my mom and grandmother. I haven't had a problem yet.
