Recipe: Cantaloupe Cream Pie

Hi Kim,

Here's one version for you. I haven't tried it but it looks yummy!

1 c. sugar
2 tbsp. flour
2 eggs, beaten
1 cup cantaloupe, pureed in blender
1 tsp. vanilla
2 tbsp. margarine
1 baked pie shell
Cool Whip

Combine sugar and flour in saucepan. Add eggs, mix well. Stir in cantaloupe. Cook over medium heat 8 to 10 minutes until thick. Stir constantly. Remove from heat. Stir in vanilla and margarine. Pour filling into baked pie shell and refrigerate. After pie cools, pile whipped cream or Cool Whip over pie.

Pie may also be topped with meringue over the hot filling and baked at 400 degrees 8-10 minutes or until golden.
