Recipe: Cantonese Casserole (using ham, green beans, water chestnuts, and sour cream)

CANTONESE CASSEROLE

1 (10 oz.) pkg. frozen French style green beans
boiling water
1 tbsp. butter
1 tbsp. all-purpose flour
3/4 cup milk
2 tbsp. soy sauce
2 cups cubed, cooked ham
1 cup dairy sour cream
1 (5 oz.) can water chestnuts, drained and thinly sliced
1 cup buttered soft bread crumbs
Paprika
Chinese hot mustard (for serving)

Preheat oven to 350 degrees F. Grease a 10x6x1 1/2-inch baking dish.

Pour boiling water over beans to separate; drain well. Set aside.

In saucepan melt butter; blend in flour. Stir in milk and soy sauce; cook and stir over medium heat until thick and bubbly. Remove from heat.

Stir in cubed ham, the green beans, sour cream, and water chestnuts.

Pour into prepared baking dish. Sprinkle buttered bread crumbs over the top. Dash generously with paprika.

Bake in moderate oven, 350 degrees for 30 minutes, or until just heated through.

Serve with Chinese hot mustard on the side.
