you can adapt the recipe according to your particular taste. I use only 1 chili because I have a somewhat delicate stomach. Other cooks would rather use the 4 chlies, but in reality I prefer the carnitas with the Cuban touch (less spicy that Mexican version). Thanks for asking dear friend,
