Baked Chicken Chimis
1/2 c. chopped onion
2 cloves garlic, minced
1/4 c. chili powder
2 c. salsa
3 tbsp. water
1/2 tsp. ground cumin
3-4 cooked chicken breasts, shredded or chopped
1 c. refried beans
6 large flour tortillas
12 Tbsp. olive oil
Grated cheddar cheese
Preheat oven to 425 degrees.
Saute onion and garlic in a large saucepan until tender. Stir in chili powder, salsa, water, and cumin. Stir in chicken and heat through.
Spoon a heaping tablespoon of beans down center of each tortilla, working with 1 tortilla at a time. Top with 1/2c. of the chicken mixture and some cheese. Fold up tortilla and secure with toothpick. Place seam side down in a lightly greased 10x15 baking dish. Brush sides with oil.
Bake for 15 minutes, or until golden brown and crisp, turning every 5 minutes.
*Note: This recipe can be modified for taste by decreasing the amount of chili powder, and the heat of the salsa used.
