Recipe: Charlie's Dressing for Tina ---IL

Salads - Salad Dressings
CHARLIES'S DRESSING

1/4 lb. bacon
1 large onion, diced
1/4 tsp. celery seed
1/4 tsp. basil leaves
1/4 tsp. poppy seeds
1/2 lb. brown sugar
1-1/2 cups cider vinegar
1 cup vegetable oil
1/4 tsp. chives, fresh or dry

Cut bacon into 1-inch pieces and fry till crisp. Keep bacon fat in skillet along with bacon. Add onion. Saute until tender. Add seasonings. Combine brown sugar and cider vinegar. Add to onion mixture. Bring to boil. Turn off heat. Add oil and chives. Pour warm mixture over salad greens. Refrigerate unused mixture. Just reheat to use.

Pour over a salad composed of romaine lettuce, fresh spinach, shredded Swiss or Provolone cheese, croutons and sliced fresh mushrooms.
