CHERRY ALMOND GLAZE
1 tsp. butter
1/4 cup slivered almonds
1 (12 oz.) jar cherry preserves
2 tbsp. white corn syrup
1/4 cup red wine vinegar
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. cloves
In pie plate, place butter and almonds in microwave and toast. Use 1 1/2 quart casserole and stir together all other ingredients, cover and microwave on high 5 to 7 minutes, stirring after 4 minutes. Stir in toasted almonds just before glazing a ham or pork roast.
Hi Anne,
I know a holiday isn't the best time to experiment with a recipe, but if the glaze recipe you're looking for doesn't turn up, I would give the above recipe a try. Substitute apricot preserves for the cherry preserves, maple syrup for the corn syrup, and use wine instead of wine vinegar. I would leave out the nutmeg and cinnamon because some may find it too spicy with the ham. You can omit the almonds too if you'd like but I think they'll add a nice touch, just be careful not to let them burn. I hope that's a help.
