Recipe(tried): Gene's Salmon Glaze/Marinade for 3 or 50!

We went to an association dinner last night with the men in charge of the cooking and cleaning up! Very nice dinner.

They had done baked salmon with a wonderful glaze brushed over it for cooking, and had reserved additional to pour over it when serving. I asked for the recipe and he emailed it to me this morning.

He included two quantities - one for 3 people and the other for a group of 50 people. The salmon was cut into serving pieces and baked on baking sheets with foil for easy clean-up.

Gene's Salmon Glaze

For 3 people:

Melt the following ingredients in a saucepan

1 Tbsp. brown sugar
1 tsp. honey
2 tsp. butter

Let cool somewhat, then whisk in the following:
2 Tbsp. Dijon mustard
1 Tbsp. Soy sauce
1 Tbsp. Olive oil
2 tsp. grated ginger root

After mixing together, bring back almost to a boil, cool and then brush onto tops of salmon filets, reserving some aside to spoon on after it comes out of the oven for serving.

Using the same cooking technique, below are the quantities if you're doing a group cooking for 50 people:

1 cup Brown sugar
1/3 c. honey Melt these all together
2/3 c. butter

After cooling somewhat whisk in the following:
2 c. Dijon mustard
1 c. soy sauce
1 c. olive oil
2/3 c. grated ginger root

Bring back to almost a boil, cool down, and use as above.
