Recipe: Cherry-Rhubarb Cobbler (using cherry pie filling)

CHERRY-RHUBARB COBBLER

FOR THE FILLING:
1 (21 ounce) Can cherry pie filling
3 cups chopped Rhubarb
1 cup Sugar
4 tablespoons Butter
FOR THE CRUST:
1/2 cup shortening
1/4 cup sugar
1 egg
1 cup all-purpose flour
1 teaspoon baking powder
1/2 cup milk
Ice cream (optional, for serving)

Spread fruit in a 13x9-inch baking pan. Sprinkle with 1 cup sugar and dot with butter; set aside.

To make the crust, cream shortening and 1/4 cup sugar in a mixing bowl. Add egg and beat well.

Combine flour and baking powder; add alternately with milk to creamed mixture. Pour over fruit.

Bake 350 degrees F for 50 to 60 minutes.

Serve with ice cream, if desired.

Makes 12 servings
