This is a repost of a Family Favorite Cookie that I make for all special occasions. Very yummy! Enjoy! Judy
CHERRY SURPRISE COOKIES
maraschino cherries
2 cups flour
1 cup butter, softened
1/2 cup confectioner's sugar
2 egg yolks
2 teaspoons almond extract
1/4 teaspoon salt
FOR TOPPING:
thin powdered sugar icing, tinted pink
ground nuts (optional)
Preheat oven to 350 degrees F. Lightly grease baking sheets.
Drain the cherries very well on paper towels.
Mix all ingredients together but the cherries. Roll dough into balls about the size of small walnuts, being careful not to handle too much or the dough will become too soft. Flatten each ball and roll around a cherry to make a ball again. Place on prepared baking sheets.
Bake at 350 degrees F for 15 minutes or until golden brown.
Top with thin pink icing when cold. (I dip the tops carefully) Sometimes I then dip them again in ground nuts.
